Lemon Hemp Seed Cookie

Health Benefits:

1 cup whole grain flour
1/2 cup unsweetened shredded coconut, toasted
6 tbsp hemp seeds
2 tbsp black chia seeds
1/2 tsp baking powder
1/4 sea salt
1/2 cup liquid honey
1/4 cup cold pressed canola oil (Mountainview Canola)
1 tsp pure vanilla extract
1 egg
1 lemon, zest and juice

1.​Preheat oven to 350°F.
2.​Mix together flour, coconut, hemp seeds, chia seeds, baking powder and salt.
3.​In another bowl, cream together honey, oil, vanilla, egg and lemon juice and zest.
4.​Combine all ingredients together and mix well.
5.​Scoop dough onto a parchment paper-lined cookie sheet. ( I used the small black portion scoop)
6.​Place in oven and bake for 15 – 20 minutes or until the top and edges are brown.
7.​Remove from oven and let cool.
8.​Eat and enjoy!

Yield: Makes 16 – 20 cookies
