Lemon Hemp Seed Cookie

-Made with all Canadian products (mostly local)
-High in Omega 3’s
-No refined flour, sugar or fats
-Complex carbohydrate, so won’t spike and crash blood sugar
1 cup whole grain flour
1/2 cup unsweetened shredded coconut, toasted
6 tbsp hemp seeds
2 tbsp black chia seeds
1/2 tsp baking powder
1/4 sea salt
1/2 cup liquid honey
1/4 cup cold pressed canola oil (Mountainview Canola)
1 tsp pure vanilla extract
1 lemon, zest and juice
1.Preheat oven to 350°F.
2.Mix together flour, coconut, hemp seeds, chia seeds, baking powder and salt.
3.In another bowl, cream together honey, oil, vanilla, egg and lemon juice and zest.
4.Combine all ingredients together and mix well.
5.Scoop dough onto a parchment paper-lined cookie sheet. ( I used the small black portion scoop)
6.Place in oven and bake for 15 – 20 minutes or until the top and edges are brown.
7.Remove from oven and let cool.
8.Eat and enjoy!
Yield: Makes 16 – 20 cookies
